My quick and easy Pancake Recipe

The 25th Feb 2020 (Shrove Tuesday) is Pancake Day here in the UK, and its a favourite day of mine. Who doesn't love eating pancakes? Therefore I thought I’d share with you a quick and easy recipe to make some healthy pancakes tonight.
I’ve used this recipe for years and I love the fact that with only a few ingredient swaps this dish can be made Gluten &/or Diary free so easily, so no one will miss out on any pancakes ever again!
Ingredients:
200g Flour (or Gluten free flour)
2 eggs (or 1 tbsp Chickpea flour + 2 tbsp water)
500ml milk (or vegan/oat milk)
Little oil (to grease the pan only).
Whatever toppings you like (Lemon, Sugar, Maple syrup, Nutella or Fruit etc).
Method:
Add the flour, egg (or chickpea flour + water), and half the milk into a large bowl & beat to a smooth paste.
Stir in the remaining milk to make a thin batter. then you’re ready to go. (You can also refrigerate the batter for up to 12hours if you want to prep the batter in advance).
Lightly oil a shallow frying pan and get the pan quite hot.
Stir the batter then ladle some into the hot frying pan, making sure the pan base is covered in light layer of batter.
Cook the pancake on both sides until its golden. (Flipping in the air is your choice!!)
Serve with whatever fillings/toppings you like!
